last night, my mum and i made a delicious dish called 'seafood pasta'. we were inspired to first make this dish when we went to sans sebastian in spain. the seafood culture in the area is incredibly tasty, varied and healthy.
here are the ingredients that we use to cook for a family of 5
- 1 dressed crab (and some extra crabmeat)
- 1 clove of garlic
- 1 courgette (chopped into thin sticks)
- some bacon lardons (in little cubes)
- a pinch of chilli flakes
- parsly (to be used as a garnish)
- 1 small leek (chopped up finely)
- spagetti (measured by number of servings)
method
- fry the bacon and garlic off in a pan with some olive oil
- when they are ready, add courgette and leek. the courgette should be slice into medium sized sticks and the leek should be finely chopped
- toss the contents around with a pinch of chilli flakes
- when they look nearly ready, add the dressed crab. if 1 crab is not enough, use another one OR use some tinned crab, its still delicious but dressed crab is the nicest :)
- garnish the seafood mix with parsley and squeeze with lemon.
7. as soon as the pasta is ready, drain it and put some into a serving dish.
8. immediately toss the spaghetti among the seafood dish, trying to evenly distribute the seafood.
9. keep adding more pasta and seafood mix until you have a large dish of mixed content.
10. add some olive oil while stirring the mixture to prevent sticking
i advise that you serve the dish immediately so that it is still hot and fresh!
note to vegetarians: i will put a no-meat meal up soon! and if you can eat fish, taking away the bacon is a good alternative :)
i always like to have a vegetable dish to go with my main course, regardless of how many vegetables the main course already has! i chose to prepare some steamed samphire. samphire is a sea plant, a bit like seaweed. it is salty and it grows on the coast line of british beaches, it is delicious! prepare the samphire whilst cooking the pasta by steaming it over the cooking spaghetti. the plant should be looking green and healthy but not to firm, dish it into a small bowl and serve to eat hot with the seafood dish. here is a picture of the final meal :)
i hope you all enjoy trying out this recipe, i certainly did! its quick and easy to do and a perfect mid-week treat. its also great for large families because its very easy to make in large quantities.
